Tibs is one of Ethiopia’s most beloved dishes — a hearty stir-fry of cubed beef, lamb, or goat, pan-seared with onions, garlic, rosemary, and sometimes berbere or awaze (spicy sauce). The meat is typically cooked to order and served hot and sizzling, often on a cast iron plate or clay pan.
